Tonight I made Giada’s Quinoa Pilaf for Family Dinner Night. If you are looking for a way to jazz up your quinoa you should try this recipe. It received high marks all around from my family. I served it warm but I can’t wait to dig into the cold leftovers tomorrow as I’m betting it will be even better after a day in the fridge. While making this recipe I started thinking about the many different variations of this recipe you could make. You could substitute spinach for the arugula and even add in finely diced carrots or even mushrooms would be scrumptious. I will add that I used water in lieu of chicken stock but if I had veggie stock I probably would have used that. That being said, this dish was still delicious. Giada you have yet to disappoint.
