Chipotle Black Bean Sliders with Pineapple Salsa

These little babies were inspired by Chef Chloe Coscarelli’s Black Bean Baby Cakes.  I did make a few changes however, but her idea to pair spiced black beans with sweet pineapple is a real winner.  This recipe happens to be vegan.  I am not a vegan, but lately I find I’ve been making a lot of vegan friendly dishes.  Sometimes, you just don’t need gobs of cheese to make your food tasty (but sometimes you do.)  Warning:  these are spicy.  If you’re not a spice lover, try using regular chili powder or maybe even cumin in place of the chipotle powder I used.

Chipotle Black Bean Sliders with Pineapple Salsa

You’ll need:

  • 4 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped (I used garlic press)
  • 1 can black beans, drained and rinsed
  • 1/2 red bell pepper, finely chopped
  • 1/2 cup cornmeal
  • 1/2 cup bread crumbs (I used panko)
  • 1/3 cup chopped cilantro
  • 1 tablespoon chipotle chili powder
  • 1 teaspoon sea salt
  • 1/4 cup water
Saute onions in 2 tablespoons olive oil over medium heat until tender and slightly browned, add in garlic and bell pepper and let whole mixture soften.  Transfer this mixture to a large bowl.  Add beans, cornmeal, bread crumbs, chili powder, salt, cilantro and water.  Using a potato masher or your hands, mash it all together.  If it’s too dry and not sticking together, add a little more water (I used closer to 1/2 cup water.)  Form mixture into 16 2-inch patties.  Heat remaining 2 tablespoons olive oil in a non-stick skillet and cook patties until browned on both sides – about 3 minutes per side.  Serve as is or on little pieces of romaine lettuce and top with a spoonful of the pineapple salsa.

Pineapple Salsa

Mix together 1 cup diced pineapple, 1/4 cup finely chopped cilantro, 2 tablespoons finely chopped red onion, 1 tablespoon agave and a pinch of sea salt.

  1. These look lovely! My attempt at chef chloe’s sliders was much less successful – I forgot to saute the onions first. 🙂
