Baked Egg with Spinach and Black Beans

This morning, I was able to assemble this baked egg dish in literally 5 minutes before I had to put Penelope down for a nap. When she finally fell asleep I pulled this beauty out of the oven. It really is so easy and delicious and could be very easily modified to feed a crowd. (Salt and pepper will do if you don’t have the Trader Joe’s smoke blend.)

Baked Egg with Spinach and Black Beans

You’ll need:

handful of spinach
1/3 cup black beans
1 cup salsa
1 egg
Trader Joe’s South African Smoke Seasoning Blend
Salt to taste
Small oven-proof dish

Pre-heat oven to 350 degrees. Sauté spinach with the black beans until spinach is wilted. Add in the salsa and cook just to heat it through. Spray your little oven-proof dish with non-stick spray. Pour the spinach mixture into the dish leaving a little indention for the egg. Add the egg. Top with seasoning and a little salt. Cover with foil and bake for 15 minutes or until egg white is set. Enjoy!
