I slept in today. What?!?! I ventured into the kitchen at 10:30 a.m. and couldn’t decide between breakfast and lunch. This salad was my delicious solution!
Sunny Brunch Salad with Citrus Dressing
First make the dressing:
Whisk together zest of 1/2 an orange, juice of whole orange, juice of 1/2 lemon, 1 to 2 TBSP olive oil, pinch of salt and pepper.
Next, assemble the salad:
Drizzle 1/2 the dressing on 2 cups of spinach and give it a good toss. Chop up 1/2 an avocado, a little red onion and a small handful of parsley. Oh and slice up one boiled egg. Add everything to the top of your spinach and finish with a couple tablepoons of crumbled goat cheese the rest of the citrus dressing. Add a little more salt and pepper to taste and you’re done!
